DESCRIPTION

Purple barley is an heirloom grain that originated in Tibet. High in protein, the grain has the chewy texture of regular barley but with a dark purple hue. The dark-purple seed coat is also high in the antioxidants known as anthocyanins. Because it retains its color, purple barley adds a layer of interest when anchoring a grain bowl or shoring up a salad. Also delicious in soups and risottos, it takes about one and a half hours to cook if unsoaked, about one hour if soaked.

From Hayden Flour Mills, a family business in Arizona that is devoted to making the freshest and most flavorful flours from some of the world's oldest varieties of wheat. These varieties include white Sonora wheat, the earliest kind grown in Arizona; three types of barley; and farro dating as far back as 10,000 years.
