Based in Oakland, Baia Pasta specializes in brass-extruded pasta using only the finest organic flours from America. Their organic durum wheat flour comes predominantly from the Rocky Mountains region (Montana, and in minor quantities, Colorado and Utah) and is milled finely to allow for consistent extrusion.

The flavor of the semolina is enhanced by the slow-drying and cold water kneading techniques for a deep, complex flavor.
