HomeFarm Olio Nuovo
A seasonal treat, olio nuovo is an unfiltered “new oil” that goes straight from the mill to the bottle, and is available for just a few months each year — typically from November through February.
Our HomeFarm had a record olive harvest this year. Smooth and buttery, with a slight peppery finish, this certified organic extra virgin blend is made primarily from four French olive varieties — Picholine, Lucques, Tanche, and Grossane — grown on our Dry Creek property, which are then handpicked and cold-pressed.
This ultra-fresh olive oil has a relatively short shelf life and should be used within a few months of pressing. Its ephemeral charms are best showcased when used as a finishing oil — drizzled over sauteed greens, winter salads, soups, pastas, or polenta. Or savor it as the Tuscans do and simply pour it on thick slices of grilled bread with salt. 500mL.
